Pea flour cake and ricotta cheese
250 gr pea flour
300 gr fresh ricotta
200 gr sugar
50 gr cocoa powder
1 yeast sachet
Ricotta is an Italian whey cheese made from sheep, cow, goat. In this recipe we used cow ricotta. You can replace it with white cheese, cottage cheese or Buttermilk Cheese.
Start with the flour. If you don’t have it, you can make homemade pea flour, using split peas. Yellow or green. They do not have the seed coat. You can find dried peas in many supermarkets. Pour the pea flour, yeast and 150 grams of sugar in a nice bowl. Mix the dry components and add the egg yolks.

Crush the ricotta with a fork and add to the mixture which will be creamy and quite workable but not fluid.
Separate about a third of the mixture that we will combine with 50 grams of cocoa and 50 grams of the remaining sugar.

Divide into proportional parts: 2/3 light (only pea flour) and 1/3 dark (part with cocoa).
