Chickpea and coconut flour tortillas
200 gr chickpea flour
60 gr coconut flour
100 gr di sugar
a pinch of salt
In a bowl add the chickpea flour, coconut flour, sugar and a pinch of salt. Slowly add the water until a compact and soft dough is obtained. Work the dough until you get a smooth ball.
Let it rest for at least an hour.

Divide the dough and make balls. Using chickpea flour roll out until you get tortillas. Put them on a non-stick pan and cook a couple of minutes on each side.
We recommend to consume with jam, honey or to accompany yogurt and fruit. Rich in plant proteins and fibers. Suitable for those who choose natural and gluten-free products. Alternative to rusks and industrial brioche. The dough can be prepared the night before and make the tortillas in the morning for breakfast.
